Here is a simple and YUMMY recipe for Kohlrabi.
- 1 1/2 pounds fresh kohlrabi, ends trimmed, thick green skin sliced off with a knife, diced
- 1 tablespoon olive oil
- 10 garlic scape (soft part). minced
- rosemary
- Salt and pepper
- Good red wine vinegar, or plain white vinegar (2-3 tablespoons)
Pre-heat oven at 400F.
Toss the diced kohlrabi with olive oil, garlic, herbs and salt/pepper in a bowl. Spread out mix on a rimmed baking sheet and put into oven and roast for 30 – 35 minutes, stirring every five minutes after about 20 minutes. Add with vinegar…if you plan on making this ahead of time don’t add vinegar until serving. Garnish with some herbs.
* Kohlrabi will be ready for harvest in mid-June.
