Zucchini Patties
This is a great snack or can make a nice side dish. I severed the zucchini patties with fresh tilapia fillets!
Ingredients:
- 1 cup grated raw green zucchini
- 1 cup grated raw, yellow zucchini
- 2 tablespoons minced onion
- 1/4 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 1/4 Italian bread crumbs
- 2 eggs
- 2 tablespoon mayonnaise
- 1tablespoon butter
- salt and pepper to taste
- 1/4 tablespoon basil
- ** Feel free to add garlic or more of your favorite herbs.
Directions:

Press excess moisture out of grated zucchini between paper towels.

Mix together everything but butter to make the batter. Melt butter in skillet.

Spoon batter (about 2 heaping tablespoons per patty) into skillet. Flatten lightly with spatula.

Cook over medium heat until nicely browned on both sides.

Serve plain or top with tomato sauce and grated cheese.
** If you find the inside too moist put in the over @350 for 10 minutes.
