I made these for John last night. He loved them!  We had them with lamb chops, mashed potatoes and homemade tomato soup (yes!  Using your tomatoes!).

They also go great with pork chops or steak, and are perfect for anyone that likes roasted onions, but is looking for something different or doesn’t want to turn the oven on! The mustard and sugar can easily be adjusted depending on if you like them more savory or sweet. Your red onions are lovely for these, but if you’re using a really strong onion soak the halves in water for 20 min or so to soften the taste.

 

4 large onions.

Salted Water

1/3 cup packed brown sugar

1/4 cup Apple Cider Vinegar

2 tbsp cooking oil

1 tsp grainy mustard

1/2 tsp salt

1/8 tsp fresh ground pepper

 

Cut onions in half crossways. Place onions cut side up in a large fry pan. Add salted water – you need about 1/4 inch deep in the pan. Cover and simmer for about 20 min. Check they don’t cook dry. Add water if needed.

Mix the rest of the ingredients and pour over the onions. Cook the onions covered, basting often until the liquid is almost gone.
